Veggie Rice Bowl with Turkey and Yum Yum Sauce

Ingredients
- ½ cup cooked brown or wild rice
- 1 cup steamed broccoli florets
- 1 cup roasted sweet potato cubes
- ½ cup shelled, cooked edamame
- 2 pieces APPLEGATE ORGANICS® or APPLEGATE NATURALS® Oven Roasted Turkey
- 1 tablespoon yum yum sauce, preferably Primal Kitchen
- 1 scallion, thinly sliced
Instructions
Scoop the rice into a bowl and top with the broccoli, sweet potatoes, and edamame. Roll each piece of turkey into a tight log then cut crosswise into pieces; add to the bowl. Top with a drizzle of yum yum sauce and sliced scallions.
